Dungeonkeeper-ish selection and level generation.

I want to create something for a game kinda like the digging part from dungeonkeeper in the sense that you can select an area and have miners/minions start digging it.
I'm working with cubes and it would work something like this.
And I have made these beautiful cubes so far.
So I need some help/pointers on how I could do that as I really have no clue where to start.

I also need help with how to make the level, I want it to be very big/infinite but I don't know how to make it generate that as you scroll around.
It needs to be generated with different types of cubes.
Any pointers on this would also be awesome.
