how to i set it up that the UI will auto rescale to whatever screen resolution the device is set as of the moment

Hi,

 This is something you set on the Canvas, not something you setup in PlayMaker.You have a Canvas Scaler component and you'll be able to define how it behaves. Select "Scale with screensize" and then play witht he settings to find the sweet spot for the match ratio.
