The bottom line is no tool is safe without knowledge and expertize, and agree with you in this. No one is safe just because the project is in pur c#, the damage and failure will be as bad as any other tools used, simply because it was in the hands of a developer that needs to learn more about c# or the tool at hand.
However, PlayMaker brings a lot on the table that you don't get with c#, so in that sense you'll produce something faster, wether you are a beginner or an expert, that's the case with all types of frameworks over raw development. Imagine starting a project, and you do not get anything from the community nor the asset store... imagine the pain and waiste of time... having to reinvent the wheel for everything...
And you have a good point on documentation...
