There are
great many tutorials on YouTube for Playmaker, too. Nobody will teach you how to make your exact game, but you can learn all the principles you need. There's also a
tutorial link at the top for more.
Begin with basic Playmaker tutorials that give you a general idea how things work. You can already try make some simple RPG. I think I started once with
this series.
Once you're familiar with the principles, you can invent your own game, with your own stats and use them the way you want.
The statistics are eventually variables that are stored in FSMs. The FSMs contain the logic what to do with the variables, i.e. you take e.g. health points, substract damage points, and spit out the remaining health points.
